Notes: This highly extracted
wine glows like a jewel in the glass. A blend of 1995
Cabernet Franc, 1996 Cabernet Sauvignon and 1997 Cabernet
Sauvignon, every sip is a testimonial to winemaker John
Munch's blending talents. Big bodied but supple with
dark fruit flavors and a hint of pepper, the smooth
finish lingers with flavors of cocoa. Food-friendly
in style, the Chateau has succeeded in crafting an extremely

Chateau Gayot represents a partnership between food
and wine authority Alain Gayot and one of the Central
Coast’s hottest winemakers, John Munch of Le Cuvier.

word from winemaker John Munch:
Sometimes a barrel of wine is especially fine, and I
put it aside for my own table. Thus, several barrels
accumulated in my cellar, some of cabernet franc and
some of cabernet sauvignon---wines spanning three vintages
were set aside to slumber. Serendipitously, I met Alain
Gayot, who wished to assemble a unique wine blend. Immediately,
the words of John Wilmot, Second Earl of Rochester,
sprang to mind: "Let your well-discerning palate…travel
from cellar to cellar and then from barrel to barrel
till it has lighted on wine fit for its noble choice
and my approbation." Alain has done that, and this bottle
is the result of our joint effort to blend the very
best. The good Earl was also heard to utter the following
words on June 17, 1653---words that succinctly illuminate
the nature of our collaboration: "Seek between you the
best wine in town, and pray let not this highest hand
in friendship be performed slightly, but go about it
with all due deliberation and care, as holy priests
to sacrifice, or as discreet thieves to the wary performance
of burglary and shoplifting."
